English Muffin Spicy Hot Wings Party Bites
Growing up, toasted English muffins and strawberry or grape jam was a staple breakfast in my home. While they are a favorite breakfast meal, Bays English Muffins have rewritten the rules and are showing how English muffins are great any time of the day. With endless toppings options and now a long list of creative recipes from the Bays chefs, English muffins are making memories for my family on our kitchen table too. When my mom comes for an overnight visit I make sure to have Bays English Muffins and grape jam in the refrigerator but she’s the most surprised when I bring out a creative recipe like this one to make these spicy hot wings party bites.
Currently breakfast is the one meal our family struggles to share at the breakfast table. We are always on the go and that includes as we’re running out the morning to start our school and work days. Our oldest daughter rides to school with her dad most days earlier than her little sister is awake. Then I get her up to start the day and drop her off at preschool before rushing home before my first morning conference call. Bays English Muffins are a great way to start the day for all of us, regardless of how disjointed that experience might be, but are also delicious at any time of the day. I’m carrying on my mom’s enthusiasm for starting her days with English muffins by sharing them for more than just breakfast, at times when our entire family can sit down at the table to enjoy them together.
Spicy Hot Wings Party Bites Recipe
Ingredients:
- 1/2 cup blue cheese dressing
- 1/3 cup crumbled blue cheese
- 2 tablespoons sriracha hot sauce, or more to taste
- 2-1/2 cups diced cooked chicken or 2 (6-ounce) packages refrigerated cooked diced
- chicken breast
- 6 BAYS English Muffins (any flavor), split, toasted
- 24 (3-inch) wooden picks
- Celery sticks
Combine dressing, blue cheese and hot sauce in a medium bowl and mix well.
Place chicken in a microwave-safe bowl. Cover and cook at high power 1 to 2 minutes or until chicken is heated through. Add to bowl and toss with dressing mixture.
Spoon a heaping 1/3-cup of chicken mixture over each muffin half. Fold over and secure with a wooden pick. Serve with celery.
