Chicken Zucchini Rollups

There aren’t many nights our family is home together without at least one after school activity, practice or game, or activity we are committed to. With that busy schedule in mind it’s tough to make nutritious meals and find weeknight dinner ideas we can enjoy together. Keeping some staple items in our pantry has been key to preparing meals quickly without time consuming prep in the kitchen or a stop by the grocery store on the way home from work. This week I made Chicken Zucchini Rollups with NEW RAGÚ® Simply Chunky Marinara Pasta Sauce. The sauce is made with 100% olive oil and contains no added sugar so it taste delicious and is something I can feel good about feeding to my family.

Because I used the best pasta sauce, NEW RAGÚ® Simply Chunky Marinara Pasta Sauce, I didn’t have to add any additional spices. It’s already seasoned perfectly with a taste my entire family enjoyed. Each jar of sauce is filled with plump tomatoes, onions, garlic and other spices giving proof that simple recipes can bring tons of flavor.

Chicken Zucchini Rollups Recipe

Ingredients

  • NEW RAGÚ® Simply Chunky Marinara Pasta Sauce
  • Baked zucchini strips
  • Shredded chicken
  • Shredded mozzarella cheese

To prepare zucchini, first cut into thin strips. Use cooking spray on a baking sheet then lay zucchini strips flat on the pan. Bake at 400ºF for 20 minutes. This makes the zucchini strips flexible for the rolls.

Allow zucchini to cool then top with shredded chicken and mozzarella cheese.

Prepare baking dish by pouring half of NEW RAGÚ® Simply Chunky Marinara Pasta Sauce in bottom of dish.

Roll up zucchini strips. Zucchini should be on the outer edge of the roll with the ends on the bottom.

Place rolls in baking dish then pour remaining NEW RAGÚ® Simply Chunky Marinara Pasta Sauce over the top.

Cover sauce with mozzarella cheese.

Bake at 350ºF for approximately 25 minutes or until cheese melts. Remove from oven, allow to cool and serve. Enjoy with fresh baked bread on the nights you have more than a mealtime of time to spend with your family. For us, I’m appreciative of a meal that includes a protein and veggies together so I don’t have to remind my daughters veggies are a required part of dinner.

  3. Yuuuuum! I know this is going to be a hit with my kiddos. I may or may not tell them about the zucchini. When they see the red sauce and cheese, they’ll be sold!
