I prepare most meals in our house and am always up against time and busy schedules. When I make waffles, I intentionally make a double batch so we have leftovers for waffle breakfast sandwiches the next day. They’re quick and delicious making the sandwiches a perfect breakfast for busy mornings before school.
Waffle breakfast sandwich recipe
Ingredients:
- 2 eggs
- 1/4 C cheddar cheese
- 1/2 C milk
- bacon
- waffles
Waffle tip: if you don’t have leftover homemade waffles, this waffle breakfast sandwich recipe is great with frozen waffles too.
Whisk together milk, egg and cheese.
Cook egg mixture in skillet over low heat.
Use a biscuit cutter or circle cookie cutter to cut the egg for the waffle breakfast sandwich. I didn’t have either so I used a glass to cut the circle shape.
Assemble your waffle breakfast sandwich with the quartered waffle, egg and bacon.
The sandwiches are a delicious breakfast but a meal my family frequently requests for dinner too.
