Chicken and Herb Summer Rice Skillet Recipe
Preparing all meals at home hasn’t felt as exciting lately but this chicken and herb rice skillet recipe with feta cheese, lime, pineapple, tomatoes, and watermelon is everything for a deliciously easy summer evening dinner.
Chicken & Herb Summer Rice Skillet
- 1 tbsp olive oil
- 1 lb chicken tenderloins
- 1 c cherry tomatoes, cut in half
- 2 tbsp cilantro, chopped
- 1 c chicken and herb flavored rice
- 2 c water
- 1 c watermelon, cubed
- ½ c feta cheese crumbles
- 1 lime
- 1 can pineapple slices
In skillet over medium-high heat, add oil and chicken. Cook both sides of chicken until browned. Add tomatoes, cilantro, rice and water.
Bring to boil, reduce heat to simmer and cover until water is absorbed approximately 15 minutes. Stir in watermelon and feta cheese.
Squeeze lime over skillet.
Top with pineapple slices.
Serve warm and enjoy!
