Our move has kept us busy but the past week we were double booked with activities in more than a few places on our family calendar. Halloween costume making, parties, team practices, little sister’s toddler gymnastics and so much more fall goodness had us running from place to place all week. We also had a rock climbing competition and hosted a girls spa day party last weekend. That left little time for preparing family dinners and cooking dishes to bring along to festive events. With so many sweet treats being handed out during trick or treating, it was important to have a balanced meal before we stayed up late knocking on doors asking for candy last night. I made an easy slow cooker beef stroganoff to bring to share with neighbors while we all handed out candy together.
Slow cooker recipes in the fall are my very favorite. They’re fast, easy and make your entire home smell yummy. This slow cooker beef stroganoff is perfect for dinner with your family on a busy night or to bring to a fall event with friends. My daughters do not prefer mushrooms but this recipe can easily be modified to include your favorite fresh veggies.
Slow Cooker Beef Stroganoff
- Broad egg white noodles
- 12 oz beef gravy
- 8 oz sour cream
- sirloin steak
Cut sirloin steak into strips and cook in slow cooker on low for six to eight hours with gravy. Stir steak and gravy so it doesn’t stick to the slow cooker as it cooks. Just before the steak is done, boil egg white noodles until soft.
Turn off slow cooker and add sour cream to steak and gravy. Serve over warm egg white noodles.
