Cinnamon Apple Tofu Strudels
I have two daughters with completely opposite food preferences. Our oldest has always been a picky eater and likes very simple flavors. She has never shown any interest in dips, sauces or even ketchup. We try to incorporate new flavors in her meals often but are generally met with resistance. Our second daughter, six years younger than her big sister, is very adventurous with food. She will try anything and is very enthusiastic about helping prepare family meals. We embrace their preferences but managing a very busy household also means my primary goal is to have them agree on a meal. As much as I appreciate them both loving breakfast pastries, I also wish I could sneak in some protein when they ask for cinnamon rolls or scones. I can with Mori-Nu Silken Tofu Soft by Morinaga Nutritional Foods, Inc. We don’t eat tofu often, but I’ve been adding it to baking recipes like our new favorite Cinnamon Apple Tofu Strudels and am looking forward to using this protein alternative weekly.
Mori-Nu Silken Tofu is one of the highest-qualities of silken tofu on the market and does not require refrigeration. It’s a great pantry item to keep on hand and can be used in many different recipes and has a long shelf life. The aseptic packaging protects the product from light and bacteria without the use of added preservatives. The Mori-Nu Silken Tofu protein alternative is available in a range of textures from soft to extra firm. The soft variety is excellent for dips, sauces and even smoothies. It has a creamy texture and is very different than the firm varieties you can use in traditional stir fry recipes or crumbled on salads.

Cinnamon Apple Tofu Strudels Recipe
Ingredients:
- puff pastry sheets
- 1 12 oz Mori-Nu Silken Tofu Soft
- ½ C sugar
- 2 Granny Smith apples
- 8 TBSP butter
- 2 TBSP water
- 1 TBSP vanilla
- ½ C sugar
- 2 TSP cinnamon
- 1 C powdered sugar
- ¼ C heavy cream
Remove puff pastry sheets from freezer and thaw to room temperature. Preheat oven to 375°. Line sheet pan with parchment paper.
In separate bowls prepare tofu layer and apple filling.
Tofu Layer
- 1 12 oz Mori-Nu Silken Tofu Soft
- ½ C sugar
Cream silken TOFU soft and sugar in food processor or with hand mixer until smooth.
Apple Filling
- 2 Granny Smith apples
- 4 TBSP butter
- 1 TBSP water
- 1 TBSP vanilla
- 2 TSP cinnamon
- ½ C sugar
Peel, core and thinly slice apples. Melt butter in saucepan over medium heat. Add apples, water, cinnamon and sugar. Simmer over low to medium heat for approximately 7 minutes until apples are soft and sauce is thick. Remove from stove top and allow to slightly cool.
Sprinkle flour on cutting board and roll out thawed puff pastry sheet. Cut into large rectangles for individual strudels. Place puff pastry rectangles on lined sheet pan.
Spread thin layer of tofu mixture on each puff pastry center. Layer with spoonful of apple filling.Top with puff pastry rectangle and gentry press edges together. Use fork to press decorative edge around the sealed puff pastry. Brush heavy cream on top and edges. If puff pastry cracks while sealing edges, brush with heavy cream to soften. Cut three small slits on top of strudel.
Bake at 375° for 30-35 minutes. Puff pastry will have light golden-brown appearance when done.
Icing
While cinnamon apple tofu strudels are baking, prepare icing.
- 1 C powdered sugar
- ¼ C heavy cream
Whisk together powdered sugar and heavy cream until smooth. Refrigerate until strudels are done baking.
Remove strudels from oven and transfer to cooling rack. Drizzle icing on top and allow to cool before serving.
Enjoy a happy family breakfast knowing the pastries included a full serving of protein with no complaints! My oldest daughter agrees with her little sister, this recipe will definitely be on repeat in our home with different fruit variations.

That’s an interesting idea. I’ve only ever had tofu in savory dishes. I actually didn’t know you could use it in sweets. I love it.
My children are also very different when it comes to food. These look delicious so I shall pin them and we will make them.
This is super creative! I have been looking for a tofu recipe to use but I’ve found mostly salty recipes. It didn’t cross my mind to make a sweet item. Your pics look delish! Thank you for creating this!

I have not ever tried tofu. Its just never seemed appetizing to me. However, it is a genius way to sneak in a bit of protein in a sweet treat that kids are sure to enjoy.
