Being a busy working mom leaves me little time to cook dinner each night. I get up very early each morning to start the day and work in my home office while everyone else in my home is sleeping. Then I go to work in my preschool classroom until the afternoon. With errands, after school activities, and daily household responsibilities, there isn’t too much time left to spend in the kitchen before dinner time. I do my best to plan ahead with a weekly meal plan and homemade freezer meals. There is always at least one day in the week where something unexpected comes up and has me quickly trying to get dinner together with out resorting to an unhealthy quick option. I turn to my favorite “busy mommy” recipe – an easy cheesy chicken enchilada casserole. My Italian husband calls it our “Mexican Lasagna” and asks for it regularly. Luckily it’s a quick recipe that makes it into our dinner rotation frequently. With the Lay’s “Do Us a Flavor” contest I’m hoping our favorite recipe can turn into a household snack too. Cheesy chicken enchilada casserole chips sound amazing!
Cheesy chicken enchilada casserole ingredients:
- 3 shredded chicken breasts (fully cooked)
- 26 oz cream of chicken soup
- 7 oz mild diced green chilis
- 24 oz sour cream
- 3 cups shredded cheese (my favorite is a cheddar/colby mix)
- 15-20 corn tortillas
Preheat oven to 375°. Set corn tortillas and 1 cup cheese aside. Mix remaining ingredients in large bowl.
Spray bottom of casserole dish with non stick cooking spray. Tear corn tortillas into quarters and arrange on bottom of dish.
Layer filling and corn tortillas in dish ending with filling on top.
Top with remaining cup of cheese.
Bake for 30 minutes in preheated oven. Remove from oven and allow to cool.
Enjoy your yummy cheesy chicken enchilada casserole and smile because you prepared a delicious meal in less than an hour in the kitchen!
