When I received a bag of new Lay’s pico de gallo flavored potato chips as a Klout perk last week I knew the bag wouldn’t last long at our house. Although they were tasty I wasn’t planning to sit on the couch with a bag of chips until they were gone; I had big plans for a new dinner recipe with the chips. The pico de gallo chips added a great crisp and flavor to homemade chicken strips. Pico de gallo crispy chicken strips make a great family dinner or would be perfect served while you watch the big game!
The chips have a mild spice and flavor.
Ingredients:
- Lay’s pico de gallo flavored potato chips
- eggs
- vegetable oil for frying
- chicken (not pictured)
Baked chicken strips would be a great alternative to frying them in vegetable oil.
Crush the chips and beat several eggs to make the batter.
Trim chicken and cut into strips. Heat oil in pan on stove. Dip each chicken strip in egg and then the crushed pico de gallo chips. Fry chicken in oil turning once until golden brown and chicken is completely cooked.
Serve with ranch dressing to dip chicken strips.
