We live in Arizona where it never gets quite cool enough in the fall to actually claim this season with warm sweaters, scarves and gloves. We do have other ways to make sure we’re feeling that fall love though. Our kitchen has cinnamon scented pinecones out and most days I’m burning a pumpkin scented candle. We switch from our favorite cold beverages to warm versions in the morning and we make sure our home smells yummy with fall favorites like chili and warm baked potatoes. This week we combined two favorite fall meals and had Chili Baked Potatoes. There really is something special about a home cooked meal where all four of us make it to the table together. Unfortunately fall is a very busy season for after school activities. With work consuming most of my day, it’s tough to get a meal on the table between everything else we have in our calendar. Red Gold Tomatoes makes it easy to cook those warm fall meals because they have many different varieties of seasoned tomatoes that work well with your otherwise time consuming recipes.

These chili baked potatoes are a quick and delicious family meal.

Because you’re starting with the traditional taste of a bowl of chili, you don’t need to add in many spices or allow your pot of chili to cook for hours.

Chili Baked Potatoes Recipe

Ingredients:

  • (2) 14.5 oz Red Gold diced tomatoes chili ready
  • 15 oz black beans
  • 15 oz kidney beans
  • 1 lb ground hamburger
  • 1 tsp garlic powder
  • (4) large russet potatoes
  • 1 C shredded cheddar cheese

Our family does not prefer onions in most dishes so we chose to use the chili ready instead of chili ready & onions for our meal. If you enjoy onions and want to skip the tears while you chop, swap the diced tomatoes chili ready for two cans of chili ready & onions.

You just need a handful of ingredients to make a quick pot of chili.

Prepare baked potatoes by washing and baking on a baking sheet at 400 °F for 45 minutes. While baked potatoes are in oven, make chili topping. Brown ground hamburger in a skillet. Then mix in black beans, kidney beans, Red Gold diced tomatoes chili ready and garlic powder.

*time saver baked potato hack: wash potatoes then pierce each side multiple times with sharp knife, microwave for approximately 15 minutes turning halfway through heating process.

Make this quick chili for a fall family favorite.

Stir all ingredients together and warm on stovetop on medium heat. Cover and turn heat to low for approximately 20 minutes. Remove lid and smile knowing you just made chili for your family in less time than it would take to dice tomatoes.

  1. I’m not sure why I’ve never thought about making chili baked potatoes at home! I love chili and baked potatoes and I’ve ordered this when out to eat…just never thought about making it at home!
