We are in full summer mode with activities planned everyday and little time left for much else by the time we start winding down in the evenings. Lately we have been having late dinners and swimming after dark in our backyard pool too. With so much fun on the agenda, cooking dinner is the last thing on my mind most days. We’ve been very busy with activities so spending hours in the kitchen preparing meals is not how I’ve prioritized my time. This week we went to a local pottery painting studio and little sister had her first experience painting outside of our own home. She had so much fun with her sister at As You Wish and it was a great way for us to avoid being outside in the 120 degree summer heat, our hottest day of the year so far!

When we learned our week would heat up to 120, my oldest daughter asked if we could visit As You Wish, our local pottery painting studio. She loves to paint there but we hadn’t brought along her younger sister because at just two years old, I wasn’t sure she would have the patience to sit through an hour of painting. We decided to give it a try and are so happy we did. Little sister had the best time! She was so focused and intentional painting her dinosaur. At the end she flipped over her paintbrush and used the other side to add spots. We can’t wait to see the finished piece when we pick it up in a few days!
We came home and about 15 minutes later had dinner on the table. Ling Ling Fried Rice is easy to prepare and can be done on a stovetop or in the microwave. We prefer a crispy texture so I cooked it in a skillet on the stovetop. Simply cook with oil covered for 8 to 10 minutes and dinner is ready!
Everyone in our family likes the Yakitori Chicken variety most. The fried rice dish has white meat chicken grilled yakitori style with long grain rice, carrots, leeks, peas, red bell peppers and corn. Fried rice is something I love to cook and my kids really like it. I have got to look for these Ling Ling rices which my kids should like and are so quick to make.
