Although my family does not have a gluten restriction, I fully understand the challenges of switching to a gluten-free diet. A few years ago I was diagnosed with eosinophilic esophagitis, an inflammatory condition of the esophagus. Symptoms include swallowing difficulty, food impaction, and heartburn. The condition is also called allergy oesophagitis and food allergies may play a significant role. With no known environmental or food allergies I underwent testing for everything. Unable to determine the allergy with my symptoms getting worse, my doctor suggested I go on a gluten-free diet. The first few months were challenging while I was learning which foods to avoid, how to eat gluten-free at restaurants, and attempting to build a collection of gluten-free recipes to prepare at home. Years later I am no longer restricted to a gluten-free diet but will happily share what I learned with friends making the change. I went from knowing relatively nothing about gluten-free cooking to preparing yummy gluten-free meals. My gluten-free chicken mac and cheese made with Tyson gluten-free grilled & ready chicken is easy to prepare and currently a family favorite in my home.
I recently attended an in store demonstration at Sam’s Club to learn about Tyson gluten-free grilled & ready chicken. I purchased a bag of the frozen chicken and knew just what I was going to make for dinner, a tasty gluten-free chicken mac and cheese.
The Tyson gluten-free grilled & ready chicken is fully cooked and only requires a few minutes in the microwave for heating. Imagine how easily you can add chicken to your dinner recipes.
Gluten-free chicken mac and cheese ingredients:
- 3 fully cooked chicken breast fillets
- 12 oz gluten-free elbows pasta
- 2 c heavy cream
- 2 tbsp butter
- 16 oz grated cheddar cheese
Prepare pasta according to package directions. Cut chicken in small cubes.
Mix all ingredients in pot over low heat. Less than 15 minutes later you have a complete gluten-free meal for your family!

My five year old daughter is reluctant to try new foods but I had no problem getting her to taste the chicken mac and cheese. She loved it so much that she asked to bring leftovers in her lunchbox to school the next day.
