During the summer it’s easy to lose track of time and forget about your well thought out meal plans. But when you’re cooking your daughter’s favorite side dish and she’s getting an extra helping of veggies without realizing it, it’s worth sticking to your plan. My daughter has never been a big fan of veggies but she loves when I make kid friendly spinach squares. During the school year she happily asks for leftovers in her lunch the next day. This week I made spinach squares and everyone in the family was happy at dinnertime.
For as long as I can remember, getting my daughter to eat healthy has been challenging. It’s not that she prefers sweets, it’s that eating in general, is her most unfavorite thing to do. Add that to not preferring any fruits or veggies and every meal becomes complicated. As a baby, her very first food vegetable was green beans. She was not a fan.

Spinach squares are a side dish I can always rely on when I’m trying to sneak in some veggies. My daughter loves them with dinner and even will eat them cold as leftovers.
Kid friendly spinach squares recipe
Ingredients:
- 2 beaten eggs
- 1 C milk
- 16 oz grated cheese (your family preference, we use a jack/cheddar mix)
- 1 C unsalted butter, melted
- 1 C flour
- 1 tsp garlic salt
- 1 tsp baking powder
- 1/3 C grated parmesan cheese
- 10 oz frozen spinach (chopped, thawed, drained)
Mix all ingredients.
Spray casserole dish with cooking spray. Spread mixture into dish then top with parmesan cheese and paprika.
Bake at 425° for 20 minutes. Allow to cool then cut into squares to serve.

This recipe looks delicious. I was going to make but was unsure about the recipe directions. It says mix all the ingredients and then it says add Parmesan and paprika to top. Is that the Parmesan from the recipe or is that additional Parmesan? And I did not see paprika in the recipe. What size pan should this be cooked in? Thank you, Liza

Hi! This recipe looks amaaaazing! I have all of the ingredients in my fridge and pantry with the exception of milk…. but i do have a half gallon of buttermilk in the fridge. Do you think the buttermilk can replace the regular milk. I’d like to avoid an unnecessary trip to the market!
