Meal planning is the one task I can’t quite seem to stack on track with. I start each month with the idea of planning every week but then slowly that ambition moves to just surviving with a chaotic and busy schedule. Spontaneous activities, last minute school projects, unexpected work deadlines and so much more contributes to my meal planning time getting used elsewhere. Sounds familiar, right? But this year I discovered PlateJoy and it’s really helped me stick to meal planning with an easy to create menu for my daughters and shopping list every week. The kid friendly meal planning includes recipes that fit your dietary restrictions including allergies, meal sizes and can quickly be adjusted according to your weekly schedule. This week I followed a recipe for pumpkin cashew pudding cups, something I honestly never would have ventured out and created on my own without the PlateJoy inspiration. The pumpkin cashew pudding was a great after school snack and brought some seasonal flavors into our home.

When I saw the pumpkin cashew pudding cups recipe I knew I would be using pumpkin puree from a different meal to make this snack for my daughters.
There are many different ways to search for kid friendly recipes using the meal planning service app. We have our favorite foods and those we prefer to avoid already set so most times kid friendly recipes I know my daughters will love are automatically selected for us. However, you can also search by main ingredient and recipe name. When my daughter came home telling me how amazing her garlic chicken was during her school lunch, I found something similar on PlateJoy and she commended my efforts for a closely matched meal that she actually ate.
You can customize the recipes however you like and for this snack I added dark chocolate chips to the top to make it a little more appealing to my selective eaters. They claim to dislike all pumpkin flavored food but loved this pudding. Beyond adding the dark chocolate to the top, I exactly followed the recipe.
Pumpkin Cashew Pudding Recipe by PlateJoy
Ingredients:
- ½ cup cashews
- 1 oz dark chocolate
- ½ cup pumpkin puree
- ½ tsp pumpkin pie spice
- ½ tbsp coconut oil
- ¼ cup milk
- 2 tbsp maple syrup
While you are able to predetermine the preparation time required for your PlateJoy meal plan recipes, I normally don’t include any that have extended prep time. This recipe begins with soaking cashews overnight but that was an easy task. I simply put the cashews in a bowl, covered with a dish towel and left in our refrigerator overnight.
Per the PlateJoy recipe, place all ingredients except the dark chocolate in a blender or food processor. I used a magic bullet blender and quickly blended until smooth.
Pour pumpkin cashew pudding in individual serving cups, refrigerate for at least 10 minutes and top with dark chocolate. The chilled pudding was a nice after school snack for our rainy weather we’ve seen this week. Knowing my girls don’t prefer pumpkin, I was happily surprised when they asked me to make this snack again. PlateJoy for the win.

That pudding looks yummy. My mum uses grocery delivery and it is great. She is not computer savvy so I do the online order. The store’s site lets us have a list of favorites that we can cruise through then add this weeks special choices for the meal plan. It is so convenient.
This is such a unique recipe. I love cashews but Ive never tried them in a pudding. This recipe would be a big hit with my husband too!
