With school ending for summer break this week I’m looking for easy and quick daytime snacks. We love fruits and veggies but my daughters also enjoy a good cheese tray with prosciutto. Their Italian dad shared his love for a favorite deli meat with them early and they are constantly asking if we have the thinly sliced dry cured Italian ham. I’ll be mixing up our summer snacking with the help of TRISCUIT from Fry’s Food, our local Kroger grocer. We’ll be enjoying this summer snack poolside with a glass of lemonade. Summer snacking is easy with just three steps: spread, add and top. With so many neighborhood guests stopping by everyday we’ll be ready with great summer snacks. Our favorite TRISCUIT varieties are Original and Cracked Pepper & Olive Oil but many others are a great base for toppings too.

Ingredients:

  • 12 TRISCUIT Crackers
  • 3 wedges The Laughing Cow® Creamy Swiss Garlic & Herb Cheese, softened

  • 3 slices (1/2 oz. each) prosciutto, quartered
  • 12 baby arugula leaves
  • Optional: cherry tomatoes
