Pork Rice Bowl

Between after school activities, homework and family fun, our weeknight dinnertime usually looks pretty chaotic in our home. Preparing balanced meals requires a plan and usually a lot of prep time but I’ve found some easy ways to make it possible during even the most busiest weeks. We have two daughters with very different eating preferences. Our oldest daughter is very picky and decides not to try a new food with just one glance. Then we have baby sister who, very much unlike her big sister, asks for a bite of everything. S&W Beans are great for them both – the looks great, tastes great approach is easy to accomplish when cooking with the many bean varieties. Last week for my birthday I received an Instant Pot and used it for the first time. Our garlic pork chops were delicious, but even better when I used them to prepare this pork rice bowl recipe. Both our daughters loved it and it took very little time to get a better for you meal on our dinner table.

Our oldest daughter attends a very academically challenging school and although just in second grade, has quite a bit of homework every night. She’s also on a competitive rock climbing team and is the SeaWorld guest kid blogger. With a very demanding schedule, it’s important she’s eating well balanced meals and we are teaching her how to make good eating choices. She’s quite picky but has always loved beans. If it was up to her she would eat a bowl of beans, and only beans, for dinner each night. She was excited to sit for a family meal when she saw more than half her bowl was full of beans.

Pork Rice Bowl

Ingredients:

  • Cooked garlic pork chops
  • 1 can S&W Black Beans with 50% less sodium
  • 1 C prepared white rice
  • 1 avocado
  • 1 lime
  • 1/2 C teriyaki sauce

Instant Pot garlic pork chops: 3 thick pork chops, 1 TBSP garlic salt, 1 C water cooked manually on high pressure for 20 minutes.

Heat beans in small pot on stovetop. Fill one third of bowl with white rice. Fill remaining bowl with black beans. Top with sliced pork chop, avocado and lime.

Pour teriyaki sauce over pork and serve warm.

Having two completely different daughters, one ate each ingredient individually and the other mixed everything together. Either way, this happy momma was smiling because my girls were eating a well balanced meal with out any complaints.

    • Agreed, you can do so many different variations with one recipe! My daughters are such different eaters sometimes we have toppings on the table for them to select and customize their bowls.

  4. I love how quick and easy this is! It would be so easy to toss in all kinds of items for flavor, like cilantro, peppers, and anything else. A fun and easy way to customize dinner for each person! Thank you for sharing.

    • Cilantro and peppers added to this dish would be great! My picky eater is not very adventurous but I could easily add a few additions to the table so everyone could customize their own bowl.

    • My youngest daughter get pretty excited to see her meals in bowls too. My oldest, on the other hand, prefers everything to be separate and not mixed. She loved this bowl though.

  7. It’s so nice to see our kids excited for dinner especially since you cooked that food for them to enjoy. I think this is a lovely recipe. Beans are definitely full of lovely benefits, perfect for active kids!

    • Getting my oldest daughter excited for any meal is a win in our home. She would rather do anything other than sit down for a full meal – the kid really dislikes most food but she loves beans!

    • We have really struggled with our daughter trying to eat new foods. She is now eight and we haven’t had much luck. Hopefully it’s something she’ll grow out of as she gets bigger.
