I have two daughters with very different food preferences. My oldest is very conservative and rarely tries something new while our two year old daughter is quite the adventurous eater. Breakfast is where I struggle most getting them both to agree on the same meal. Mini egg muffin breakfast bites are the perfect solution because I can make several different varieties in the same muffin pan full of wholesome ingredients. In about 15 minutes I made a family breakfast with favorites for both my strong confident daughters. Mini Egg Muffin Breakfast Bites

Ingredients:

  • six eggs
  • 1/2 C DairyPure milk
  • your favorite vegetables, proteins and cheese

Whisk together eggs and milk.

Spray mini muffin pan with non stick cooking spray. Pour each muffin cup half to 2/3 full with the egg mixture.

Top each muffin cup with preferred ingredients. I made different cups in each row including plain eggs, with cheddar cheese, bacon, tomatoes and mushrooms, ham, and spinach. About half of the muffin cups were topped in cheese because one daughter loves cheddar and the other refuses to eat it on eggs.

Bake at 400° for 10-12 minutes until eggs are fully cooked.

The only question is which bite size egg muffin will be your favorite. I personally love eggs with spinach but everyone in our family has a different favorite. Our youngest enjoyed them all but to no surprise, our oldest daughter prefers just plain eggs. She doesn’t know she’s also getting the added nutrients from DairyPure milk.

  3. I love making eggs in muffin pans! I always make a bunch and put them on a bagel and freeze them. That way my husband has a quick breakfast to take to work and heat up!
